PHILADELPHIA RESTAURATEUR David Suro lays his hand on the side of the giant vats where raw tequila ferments with a special ingredient, a yeast normally used for French champagne. The tequila bubbles and pops to the baroque strains of Vivaldi and Mozart, which play 24 hours a day in the plant in Arandas, Mexico."It's alive," said Suro. "It moves to the music."
